Azzurro Cheese, Apricot and Beet Pizza

Home-made pizzas are a delight, even more in summer. To make some variation of the “traditional” pizza recipe, we have prepared an Azzurro cheese, apricot and beet pizza that has been a success.
Probably, one of the most consumed dishes in summer is pizza; a recurrent elaboration, fast and funny, that delights everybody.
Ingredients
- 1 home-made pizza dough base
- Home-made tomato sauce for pizza
- 1 pack of fresh cheese or “Burgos Cheese”
- 1 cooked beet, cut in thin slices
- 8 ripe apricots
- 100 g. of “Cabrales Cheese”
- Fresh basil
- Fresh mint leaves
- Extra virgin olive oil
- Sugar
Preparation
- Prepare the pizza dough or else buy it fresh or frozen, although the result is significantly different (not so good).
- Stretch the pizza dough and put it onto a previously greased baking tray.
- Heat the oven to 200ºC.
- Cover the pizza dough with tomato sauce, cheese and beet slices.
- Wash, dry and cut the apricots in halves; bone them and put them all over the pizza. Season them with a pinch of sugar (to caramelize them).
- Spread the blue cheese all over the prep.
- Bake it at 180ºC for 25 minutes.
- When it’s ready, take it out and spread aromatic herbs and a bit of extra-virgin olive oil over the pizza.
This pizza has no more salt than that used in the dough. It is not seasoned because blue cheese gives a salty taste to the whole prep. But if you think it’s somewhat tasteless, of course you can season it adding salt in flakes (when you are about to serve it).
Home-made pizzas accept every type of ingredients; depending on what’s there in the fridge, you can prepare thousands of varieties. On this occasion we have made our pizza with summer ingredients as beets and some good apricots. The result couldn’t have been more attractive and appetizing.
