Endivies with Azzurro Cheese and Anchovies

Ingredients
- 4 endivies
- 100 g. blue cheese
- Coriander, parsley, oregano (fresh aromatic herbs)
- 8 anchovies
- Parsley and soy sprouts to decorate.
Preparation
- To start with this delight, wash the endivies very well, and cut them along into halves.
- Mix blue cheese and aromatic herbs.
- Spread this mixture onto the endivies, and finally put an anchovy on the top.
- To decorate the filled endivias, put some fresh parsley and soy sprouts over them.
