Mushrooms Stuffed with Bacon, Ham and Neufchâtel Cheese

It is a very easy and healthy recipe. It has a very nice texture, due to the Neufchâtel cheese creaminess. This delicious cheese is also lighter in calories than other creamy cheeses.

Ingredients

  • 20 – 30 white mushrooms, with no stem
  • 3 spoonfuls of butter
  • ½ onion cut in small dice
  • 1 cup of fresh spinach
  • 5 chopped slices of bacon
  • 1 Neufchâtel cheese
  • 200 g. raw or cooked ham
  • A pinch of salt/pepper/ parsley

Preparation

  1. Preheat the oven. Cover a baking tray with aluminum foil and put the mushrooms on it with the stems facing down.
  2. Melt a spoonful of butter and unction the mushrooms.
  3. Bake for 10 minutes and then turn the mushrooms upside down and bake them for 5 minutes more.
  4. Once they are cooked, put them on cooking paper and dry them very well.

For the stuffing

  1. Melt a spoonful of butter in a medium-size frying pan, then add the bacon and cook for 2 – 3 minutes.
  2. Add the onion dice, sauté for five minutes or till onion is transparent and bacon well cooked.
  3. Add spinach to the mixture and sauté.
  4. Add the last spoonful of butter.
  5. Add ham, parsley, and a pinch of salt and pepper, and sauté for 3 – 4 minutes.
  6. Add Neufchâtel cheese cut into pieces .Stir so as the cheese melts easily in the mixture. Once it is completely melted and integrated, take it out of heat.
  7. Pour a teaspoon of this mixture onto each mushroom piece and put it again into the oven for 3 – 5 minutes. Serve it hot.
